An homage to the late, great John Anthony Clary Umberger on his 35th birthday. Special Edition No. XXXV is a magnum of sparkling cider made from apples harvested at high elevation in the Bluegrass Valley of Highland County, Virginia. 100% Ashmead’s Kernel - a rare, 300-year-old varietal from Gloucestershire, England - this English apple thrives in the American south with a distinctly old-world character that is perfectly symbolic of John.

Precise and elegant, with focused notes of chalky, lemon custard. Upon first pouring, the cider presents itself almost champagne like. Once opened up, it begins to show its true cider profile as the body broadens. Acid is prominent but not abrasive, rather integrated and quenching. Energetic.
