Fruit
An assortment of mature, forgotten, and seedling apple trees picked over the course of several months. All gleaned fruit was a mixture of windfalls and that of manual shaking, collected together with friends and family.

Vinification
All components were pressed at varying points starting as early as September 9th and as late as the 17th of November, creating continuous , uninoculated fermentations in neutral french oak barrels and glass demijohns. The components for this bottling were selected in the spring of 2022 and blended together in a 500L puncheon. Their éleage continued until the cider was racked off its fine lees in November of 2022. Bottled sparkling via the traditional method without disgorgement. No additions of SO2 were made at any stage of this cider.
Notes
In 2021, we got the exciting opportunity to forage with our close friends Cristoph and Lauren Herby on their farm in Highland County. Tonoloway Farm is located on an exceptionally stunning limestone ridge overlooking the Bullpasture River Valley below. Scattered on the farm’s steep slopes are ancient trees presumably planted generations ago and as well, their resulting wild offspring. Later in the season we returned to one of our most productive seedling locations in Chimney Run and were able to harvest primarily its higher elevations trees. The last past at Mill Run contributed the fruit used to top up the blend in late November. The resulting cider has a mild funky reduction in the nose that quickly blows off and yields a deep, glass filling aroma of finessed fruit. In the pallet acidic golden and goose berries showcase a more well rounded sense of acidity.
